Birori lies at the foot of the Marghine mountains in the area north of the Abbasanta plateau in northern central Sardinia. People have settled here ever since ancient times, as can be seen by the number of dolmens, “giants’ tombs” and nuraghi. The village abounds with wide stretches of green covered with a thick mantle of woods, like Funtana Idda and Funtana Maggiore. As well as its green natural setting and the beauty of its archaeological monuments, Birori also offers a rich and tasty food tradition, which is the first image that remains imprinted on its visitors’ memory. The dishes are mainly made with agricultural produce.
